When we think of smoothies, we think of a nutritious breakfast that can follow you from home to work. But why don't we enjoy the same energy-boosting flexibility during the dreaded afternoon slump?
Created with berries right out of the freezer means this smoothie can be made in any season, and offers the perfect refreshing drinking temperature that avoids becoming watery. Steamed carrots provide a surprisingly smooth texture, as well as your daily dose of Vitamin A, Vitamin B-6 and Vitamin C (to name a few).
Here it is, our favourite and super easy Monday afternoon smoothie that hides some serious nutrition under its creamy berry flavour.
To make our Veggie Berry Smoothie you will need:
- 1 1/2 handful of your favourite frozen berries.
- 3/4 cup of steamed carrots
- 1 tablespoon of natural yogurt
- coconut almond milk or water [amount depends on desired consistency]
- Toss berries, carrots, and yogurt into blender cup, and start with about 1/2 cup of your preferred liquid.
- Blend, making sure all chunks are smoothed out - adding liquid until your favourite consistency is reached.
- Grab a straw, take a sip, and forget all the not-so nutritious decisions you made this weekend.
Family BONUS: Smoothie + fun straw = kids who are too busy drinking this recipe to realize it's healthy!
If you've got small children, omit most of the liquid in this recipe, spoon into reusable squeeze pouch [we like this one from BooginHead] and create a cost-effective fun puree snack.
