Recipe: Lemon and Coconut Balls

Try this sweet and light treat with the tangy taste of summer.

The best part? It's a no-bake dessert!


Ingredients (makes about 25 pieces)

  • 1 cup of coconut flakes
  • 2 tablespoons of honey
  • zest from 2 lemons
  • juice from 1-2 small lemons 
  • 2 - 4 tablespoons of melted coconut oil 


Directions:

1. Blend coconut flakes in a food processor.

2. Add honey, lemon zest and blend once again.

3. Gradually add lemon juice and melted coconut, starting with small amounts.

4. Taste the mixture (you don't want it to be too sweet or too sour).

5. If the mixture is too watery and it is extremely difficult to form small balls out of it, add more coconut flakes, until the mixture is thick and sticky enough so that balls can be formed. At this stage the mixture should be relatively easy to form into balls, but still soft.

6. Refrigerate to allow coconut oil to set and balls to harden a bit.

7. These sweet treats can be stored for up to a week in a refrigerator.
